MATERIALs of PIZZA PEELs

The pizza peels are available in a variety of materials such as wood, steel, or aluminum.

WOODEN PIZZA PEEL:

These are the traditional kind of wooden pizza peel that you can find in various homes and restaurants. They give an aesthetic feel through their design and color. The use of wood also gives a natural feel to the kitchen.

They are more conventional. They are often heavy, and specific maintenance is necessary for most types of wood. Before buying ensure that it has non-toxic natural treatments and confirm that the wood is certified for the use of food purposes.

They are long-lasting and can be used for decades to come.

STEEL PIZZA PEEL:

Unlike the wooden ones, the steel pizza peels have greater fluidity and strength. They are more durable than wooden pizza peels.

They are more resistant to shocks that can happen between the oven and the work surface. Although stainless steel is rustproof, it is mixed with other metals by some manufacturers that may make it vulnerable to rust.

The edge of the metal pizza peel, however, is sharp, so while handling you have to be careful. Also sometimes, the pizza dough might stick to the surface, and thus, you need to use flour to prevent it from sticking.

ALUMINIUM PIZZA PEEL:

The Aluminum pizza peel is lightweight and you can easily carry it to put it in the oven, unlike the wooden and steel ones that are comparatively heavy in weight.

It is easy to handle because of this feature and easy for serving and transporting too. To improve their resistance and hygiene, be sure to choose an aluminum device whose alloys have undergone special treatments.

HANDLE

If you make your pizza in a firewood oven, i.e., a pizza oven, a handle that is too long would be suitable.

You require the pizza peel with a long handle to transport them to the firewood ovens and to keep yourself far away from the heat of the oven.

Otherwise, if you use an electric oven then having a long handle is unnecessary and would seem bulky. Even sometimes if your oven is small, the handle won’t fit into it.

A short handle is a better choice for indoor use, as it is simpler to handle and more accurate. They can be used inside the oven to transform your pizza, to check its cooking by raising the rim, and to remove it once it has been cooked.

Select foldable long handle wooden pizza peel that can keep burns at bay and increase safeness in the kitchen. prefer handles that are riveted into the blade to allow quick repair and longevity, ideally.

PADDLE SIZE

The size of the paddle shall determine the size and shape of your pizza. If you go for small size paddle then only small size pizzas can be accommodated and vice versa.

Usually, a normal size pizza would have a diameter of 33-36 centimeters while large ones would vary from 45-50 meters. Sometimes, the paddles can be too long to even fit inside your oven.

So before buying have a specific estimation of the size of pizzas you make.

Whilst they also come in different shapes, i.e., rectangular or round.

  • RECTANGULAR PIZZA PEEL:

The rectangular pizza peel is a safe, secure, traditional shape and it provides a greater pizza-contact surface area and the grip point from which the pizza can be raised is only milled at the front.

  • ROUND PIZZA PEEL:

With gentle, normal milling over a wide extension of the curve, the round pizza peel has an extended grip point, allowing the pizza-maker to pick up the pizza oven from the side and thus not just from the front.

In addition, the pizzas are closer to the interior of the oven, ensuring careful handling and increasing the quality of the oven, as there are beveled corners.

So, it shall depend on the dimensions and designs of pizza that you shall make and hence, center your needs to buying one of such type.

  • SURFACE AREA

The carrying surface that makes contact with the pizza also comes with various solid & perforated forms. The strong professional pizza peel does not have grooves or holes in them, while there are holes and grooves in the perforated ones so that the extra flour will escape through those holes.

The perforated carrying surface is better to prefer, as it will prevent a flour-burnt smell and taste from your pizza. In metal pizza peel, the perforated type carrying surface is often found, which also prevents the sticking of the flour.

THICKNESS OF THE PIZZA PEEL

The thickness of the peels requires to be thin.  The thinner the size of the pizza peel is, the better the handling of the pizza is. To make it much thinner, the wooden peel for pizza can not be beaten down, whereas the metal ones can be modified to make it thinner with tools.

While wooden peels are not as thin as metal or aluminum pizza peels, but whenever you want to transfer the pizza to the oven, they would be easier and convenient.

STORAGE

You need enough space for storing the pizza peel because of its handle. But if you have storage issues we would advise you to go for the pizza peel with holes on the handle as this would enable you to hang your peel anywhere at any place.

To allow for compact kitchen cabinet storage, you may also purchase folding handle unit models of pizza peels.

MAINTENANCE

The peels need to be washed by hands carefully. In particular, wooden peels would not last long due to prolonged soaking and using abrasive cleaners frequently.

There is special care required for the wooden peel for pizza. They should not be soaked in the dishwasher or washed. This will cause cracking and warping to occur. Providing it directly after use with a thorough wash and must be thoroughly dried.

You should rub some mineral oil on the surface of the wood to enhance its longevity.  If you choose to use the dishwasher, it might be a safer option for you to opt for a peel that is dishwasher safe.

You can also quickly clean the aluminum and stainless steel pizza peel.   They could even be washed in a dishwasher.

AVAILABLE PRICE

The professional pizza peel is pretty cheap all over the board. More costly ones can provide better features, but not always a higher price necessarily equate to higher quality.

If you go for wooden pizza peel, a small or medium would cost $15 to $40 while a large would range from $40 to $70. But if you go for the metal ones, a small or medium size would cost $16 to $32 while a large one would cost $32 to $55.

Usually, they cost INR 150-1500 for each pizza peel. So, while buying we would advise you to go for the pizza peel which provides the best features and good material.

How to Prevent Pizza Dough from Sticking to the Peel?

Video Transcript:

Hey Kevin Lynch here and the most common problem I hear from people making pizza at home is the dough gets stuck to the peel well it’s not hard to transfer dough from appeal to a stone you got to know what you’re doing but when you’re doing it right it’s very simple so a dough ball can be sticky so you want to make sure it has a nice coating of flour?

So it doesn’t get stuck on the peel so just take your dough ball and cover both sides with flour I’m gonna take it and put it on a floured surface and that’s where we’re gonna stretch the dough so you’re stretching it on the floured surface give it a flatten it you’re gonna stretch it out by taking your fingers and just kind of stretching in every direction after we stretch the dough we’re gonna want to put it on a peel I really like a wood peel for this process.

Because it makes it a lot easier to slide the dough around you can take flour you can rub it down into every pore this would peel which make sure there’s a really good covering of flour you don’t want to put a ton of flour it gets stuck to the bottom the pizza you want to make sure you have a nice smooth thin layer to the pizza slides around so just take the flour and just rub it in rub it into this would peel there’s not a ton of flour on there but it’s enough where it’s a nice very thin coat where it’s nice and slick if you’re a beginner I also recommend putting a little bit of semolina.

Or cornmeal on the peel to give it a little bit more slickness so just take some cornmeal and just drizzle it on here that’ll get it really nice and slick you don’t wanna have a ton of flour on your dough so you can slap it around a little bit and get it off there are some different methods for stretching out your dough you can take your hands like fists just keep spinning around like this make sure not to poke any holes with your fingers or if you want to toss it which.

I really like to do it because it helps stretch the dough just take two fists spin it catch it with your fists try to have your fist land on the outside of the dough so you’re not poking holes in the middle, okay so we’ve been prepping it in our floured surface now we’re going to transfer it to our flour and cornmeal surface on the peel as you can see it’s moving around that’s.

What you want to happen if you have a nice smooth surface for sliding around your dough the other bad thing that can happen is if any sauce gets underneath the dough on the peel that can create a sticky spot and really create problems so make sure when you’re putting on your sauce or oil or whatever you’re using make sure it stays on the pizza it doesn’t get too close to the edge where it slides off and gets underneath.

So I’m gonna make the sauce just spread it out with my ladle in a circular motion leaving a nice area for the crust on the outside so gonna have my cheese I like to add a little bit of grated Parmesan and grated Romano to my cheese pizzas.

I always like adding just a little bit of pepper a sprinkle of dried or fresh oregano all right it’s ready to go in the oven you can see it’s still sliding around that’s good we’ll be able to slide it right on the stone and you have your stairs in the oven then just slide the pizza off the peel and onto the stone just a couple of quick motions there.

We are don’t like to use a wood peel for transferring the dough onto the stone I do like to use a metal peel to get it off of the stone and give it a spin halfway if you want when it’s done you just scoop it out with your metal peel

Can I bake the pizza on the peel?

No, pizza peels are not made for cooking the pizza. They are intended as a way of moving the pizza to a very hot oven or grill from your prep area. If you tried to bake your pizza on a peel, you’d obviously damage it, particularly the wooden peel.

What wood should I prefer for wooden pizza peel?

The best wood for wooden pizza peels is maple wood. It is the hardest wood but also the smoothest one too.
